By blending 19th-century heritage with modern hospitality, production, and culinary design, we are unlocking the full potential of this historic icon.

Our expansion begins by transforming the existing patio into a sophisticated, year-round interior. While the historic Saloon remains an untouched sanctuary of classic elegance, this new addition introduces a vibrant, modern bar environment. Featuring integrated media, social gaming, and a dedicated performance stage, it is designed to host the high-energy entertainment that the historic space was never meant to hold.
Our on-site craft distillation, dedicated to producing a premium line of both full-proof and non-alcoholic spirits. By establishing a dedicated facility on the property, we have vertically integrated our beverage program—ensuring that every house cocktail features Baldwin Spirits™ by default. From exclusive on-site tastings and retail bottle sales to future regional distribution, we are building a legacy brand from the ground up.
The Baldwin ecosystem is engineered for strategic growth. Following our first year of operations, the lower lot is reserved for a data-driven Phase 2 expansion. Based on our one-year performance evaluation, this standalone footprint will scale to meet our highest demand—evolving into either an expanded "Baldwin Spirits" production facility or a sophisticated fine dining restaurant and lounge.
